Freezer Meals

I’m not a big fan of freezing cooked food. I have done it, but most of the time I don’t like the results. There is always extra lasagna but it gets dried out when its thawed and reheated. We have successfully frozen and reheated curries and pasta sauce, but thats about it.

However, Lisa (http://www.frannykatescreativestate.blogspot.com/) introduced me to the idea of freezing raw, but prepared meals. For example, I could make hamburgers, meatballs, marinated chicken etc and then freeze it, so all I have to do it cook it. Now admittedly, making meatballs isn’t that time consuming, but with two kids and after-school activities, there are days when I don’t have time to make anything unless I am super organised (and, as much as I’d like to be, I’m not always …) so the idea of grabbing some marinated chicken out of the freezer appealed to me.

So, here begins the experiment with frozen, raw meals. Today I made this : http://jugglingmum.blogspot.com/2008/07/grilled-roasted-garlic-teriyaki-chicken.html   and froze the results. I’ll see how it goes !

Menu

Mon – leftovers from Sunday BBQ (roast pork, green salad, strawberry/spinach salad, potato salad, apple crisp)

Tues – Imperial Chicken and leftover salads

Wed – pasta with meatballs and tomato sauce (our own, homegrown, organic, vine ripened tomatoes !)

Thurs – Thai Bangkok Chicken and rice

Fri – homemade hamburgers

Monday – pork sandwiches (yes)

Tuesday – Marinated Chicken, rice and broccoli and green beans (yes)

Wednesday – Bacon Cheeseburger Meatloaf,  salad (fish and chips in the park)

Thursday – Pasta with meatballs

Friday – Honey Chicken, fried rice

Tuesday – Fusilli with sausage and tomatoes, garlic bread 

Wednesday – Skillet Chicken Dijon, coleslaw and tomato salad

Thursday – Chicken Lime Avocado Salad

Friday – Sesame Beef, rice and asian salad

Monday – ate out with the kids as a treat

Tuesday – kids had crumbed/breaded chicken, mac’n'cheese, peas, corn and carrots. Pasta with chicken, pesto, cherry tomatoes, broccoli and parmesan

Wednesday – leftovers from Tuesday

Saturday – broke out the NEW bbq and had steak, pork sausages and salad

 Sunday – the lasagna that would not die ….

Saturday – absent husband, grumpy kids = nachos

Sunday – steak, roasted vegetables (potatoes, parnsip, butternut squash and carrots)

Monday – pork sausages, rosemary potatoes, salad

Tuesday – Thai green chicken curry and rice

Wed, Thurs & Fri (13th, 14th, 15th Feb)

Wed – pork chops with plum sauce, twice baked potatoes (bake or microwave the potato, cut in half, scoop out the insides and mash, mix with toppings – we just chose sour cream, grated cheese and Italian herbs – return mashed potato to potato skin, grill/broil for 10 mins or until top is crispy), cauliflower/broccoli cheese bake (make cheese sauce and pour over parboiled vegies, bake for 10 mins in oven), steamed carrots

Thurs – Chicken Tortellini Bake & salad

Friday – husband not home until late Thursday night, and had eaten Pizza Hut at work, so leftover pasta for dinner on Friday night, with salad.
