Indian Koftas

I always run out of ideas for ground beef/mince and this is a more Asian style flavour but still relatively mild. You can bqq or pan fry …

750g / 1.5lbs ground beef/mince

1 small onion, grated

1 clove garlic, finely chopped

1 tablespoon tomato paste

juice of 1/2 lemon or lime

1 tablespoon plain flour

1/2 teaspoon each ground cumin, coriander, chilli powder  (if you don’t have all of these, just add the ones you do have)

pinch each nutmeg, ground cinnamon, ginger and cloves

Combine all ingredients and season with pepper.

Divide mixture into patties or shape as kebabs around a stick.

Refrigerate 1-2 hours if possible.

Grill, bbq or pan fry until cooked though and well browned.

Marinated Chicken

Ingredients
4 chicken breasts

Marinade
1 tbsp lemon juice
1 clove garlic, crushed
2 tbsp soy sauce
2 tbsp runny honey
freshly ground black pepper
1 tbsp olive oil

a little vegetable oil

Method:
Cover the chicken breasts with cling film or greaseproof paper and flatten slightly with a mallet or a rolling pin until about one and a half cm. (1/2 inch) thick.
In a bowl mix together all the ingredients for the marinade and marinate for at least one hour. Remove the chicken and reserve the marinade.

Heat the griddle until really hot (or you could use a frying pan), brush with a little oil and cook the chicken for 4 to 5 minutes on each side or until cooked through. Strain the marinade, pour it into a small saucepan, bring to the boil and then simmer for one minute (add a little water if necessary).

Serve the chicken with the sauce. If liked, serve with a selection of griddled vegetables, such as courgettes, mange tout, sweetcorn and tomatoes.

Honey Lemon Chicken

This has a good, mild flavour and is easy to make …

Fry chicken breasts or thighs in a little oil until browned.

Remove from pan.

Add 1 chopped red onion & 1 teaspoon crushed garlic and fry until soft and fragrant.

Add 3/4 cup chicken stock/broth, 1/2 cup honey and 1 lemon chopped into wedges.

Return chicken to pan and simmer covered for 20 mins or until chicken is well cooked.
